Yield: 9 biscuits with topping
Topping:
1 lb strawberries
1 T sugar (optional)
1 recipe Whipped Cream, prepared
Biscuits:
¼ lb (1 stick) butter
1⅓ cups cornstarch
1¼ tsp. xanthan gum
1 T baking powder
½ tsp. baking soda
1¼ T sugar
½ tsp. salt
½ tsp. vanilla extract
¾ cup milk
1 tsp. vinegar
1. Preheat oven to 375º. Grease a baking sheet.
2. In a medium size bowl, blend all the ingredients for the biscuits except the milk and vinegar. Add milk and vinegar, and mix well. The dough will be quite fragile.
3. Pat the dough out on the prepared baking sheet to ½-¾ inch thickness. Cut into nine square biscuits and separate with the side of a knife.
4. Bake for 15-20 minutes, until the biscuits begin to brown.
5. Wash and slice the strawberries. Sprinkle with a little sugar if they are not sweet.
6. In individual serving dishes, top each biscuit with fruit and then whipped cream.
