1. Line a 12-section muffin tin with paper liners.
2. In a bowl: stir oats, milk and brown sugar together with a wooden spoon. Let stand 5 min.
3. Add butter and egg; stir well with wooden spoon.
4. Stir in remaining ingredients just until moistened. Add nuts if desired.
5. Divide batter evenly into 12 muffin cups; scoop batter into muffin cups using a ⅓ measuring cup and rubber scraper until ⅔ full.
6. Bake at 350º for 15-20 minutes. Remove from pans immediately.
