Yield: 12 muffins
1 stick butter, softened
½ cup + 2 T granulated sugar
2 eggs, beaten
¾ cup GF all purpose flour
2 tsp. baking powder
¼ tsp. xanthan gum
1 tsp. baking soda
¾ cup ground almonds
⅓ cup buttermilk
grated zest of 2 lemons
1 cup blueberries
3 T cream cheese
freshly squeezed juice of 2 lemons
3 T confectioners’ sugar
1. Preheat oven to 350º. Line a muffin tin with liners.
2. Mix butter and sugar in a bowl and whisk until light and creamy.
3. Combine flour, baking powder, baking soda, almonds, buttermilk, lemon zest and blueberries together and fold into butter mixture.
4. Put a spoonful of batter into each paper liner until half full. Put one teaspoon of cream cheese in each and top with another spoonful of cake batter, ensuring the cream cheese is completely covered.
5. Bake for about 15-20 minutes, until they are firm to the touch.
6. To make lemon drizzle, heat lemon juice in a small saucepan with the confectioners’ sugar and pour over muffins while they are still warm. Let muffins cool in the pan before serving.
