Yield: 6-8 servings
1 pound ground beef
¾ cup chopped onion
1 (15½ ounce) can red kidney beans, drained
1 (8 ounce) can tomato sauce
1 (7½ ounce) can tomatoes, cut up
½ cup GF macaroni
1 (4 ounce) can green chili peppers, drained
2-3 tsp. chili powder
½ tsp. garlic salt
½ cup (2 ounces) freshly shredded Monterey Jack or cheddar cheese*
1. In a large skillet cook meat and onion until meat is brown.
2. Stack several pieces of paper towel on a plate. Using a slotted spoon, remove the browned meat onto the paper towel. Pour grease from skillet into a glass bowl until cooled, then transfer into garbage (NOT SINK). Wipe skillet with paper towel. Return meat to skillet.
3. Stir in beans, tomato sauce, undrained tomatoes, uncooked pasta, green chilies, chili powder, garlic, and ¼ cup water. Bring to boil; reduce heat. Cover and simmer for 20 minutes, stirring often.
4. Top with cheese. Cover, heat two minutes longer or until cheese melts.
*Packaged shredded cheese may contain gluten to keep it fresh. To ensure it is gluten free, shred fresh cheese. *
