1 cup heavy cream
2 T confectioners’ sugar
½ tsp. vanilla extract
⅛ tsp. xanthan gum
1. In an electric mixer, combine the cream, 1 T of the confectioners’ sugar, and the vanilla extract. Beat until almost soft peaks.
2. Mix the xanthan gum and the remaining 1 T of confectioners’ sugar in a small bowl. Sprinkle over top of the cream and beat to soft peaks.
