Yield: 9-12 servings
¼ cup shortening or butter
1 egg
1½ cups GF all purpose flour
¾ tsp. salt
¾ cup sugar
¾ cup milk
2½ tsp. baking powder
Topping:
⅓ cup brown sugar
¼ cup GF all purpose flour
½ tsp. cinnamon
3 T firm butter
1. Preheat oven to 375º. Lightly grease one round 8 or 9-inch cake pan.
2. In large mixing bowl, combine ingredients in order: shortening, sugar, egg, milk, flour, baking powder and salt.
3. Mix well.
4. Use a rubber scraper to pour the batter in the prepared pan.
5. In a separate bowl, combine topping ingredients and cut in the butter with a pastry blender until crumbly. Sprinkle topping on the batter.
6. Bake for 25-30 minutes.
