Yield: 4-6 servings
4 cups old-fashioned GF oats
½ cup packed light brown sugar
½ tsp. salt
½ tsp. cinnamon
¼ cup vegetable oil
¼ cup honey
1 tsp. vanilla
1½ cup raisins
1. Preheat oven to 300º. In bowl mix the oats, brown sugar, salt, and cinnamon.
2. In a saucepan warm the oil and honey. Whisk in vanilla. Pour the liquid over the oat mixture. Stir gently with a wooden spoon; finish mixing by hand. Spread granola in a 15x10-inch baking pan.
3. Bake 40 min, stirring carefully every 10 min. Cool. Stir in raisins. Seal granola in plastic bag. Store at room temp for 1 week or freeze for 3 months.
